Gluten Free Strawberry Banana Bread

This Banana Bread recipe was inspired by @rachlmansfield banana bread recipes and others. I recently started my obsession with Banana bread and now I can’t get enough of it. And the secret to AMAZINGLY moist and soft banana bread….. Almond Flour! Its a life changer and I use almond flour in about all my recipes now instead of all purpose flour. Its also less processed and the only ingredient is almonds. Nothing else. The fewer the ingredients, the better!


Dry Ingredients:

-2 cups of almond flour

-1/2 cup coconut sugar

-1 tsp. baking powder

-1/2 tsp. cinnamon

Wet ingredients:

-2 eggs

-3 Tbs. melted coconut oil

-3 ripe and mashed bananas

-1 tsp. vanilla extract

-1 cup of washed/ chopped and patted dried strawberries.

Directions:

  1. Preheat oven to 350 F

  2. Mix together the wet (except the strawberries) and dry ingredients in separate bowls

  3. Add wet ingredients to the dry ingredients and mix

  4. Fold in the strawberries into the mix

  5. Pour batter into bread pan and bake in oven for about 45 mins to an hour.

  6. Feel free to add your favorite toppings!
