The BEST Vegan Chocolate Chip Cookies, Gluten Free, Dairy Free

I have been playing around for the PERFECT vegan chocolate chip cookie recipe and I think I finally found it! In this recipe I combined all my favorite baking ingredients into one delicious cookie recipe. Most cookie recipes call for tons of sugar, oil and eggs, but not this recipe. I don’t typically have eggs in my refrigerator, not that there is anything wrong with eggs, but they are not a necessary ingredient for baking. Also I don’t use coconut oil in my recipes usually, instead I replace coconut oil (or any oil) with applesauce which doesn’t contain saturated fats. This recipe is lower in sugar, has omega 3s and fiber from the flax seeds, and contains a healthy source of protein and carbohydrates. These cookies are my new pride and joy, so I hope you enjoy this recipe as much as I did making them!
The BEST Vegan Chocolate Chip Cookies, Gluten Free, Dairy Free
Ingredients:
-1 cup of almond flour (I used this brand)
-1/2 tsp. of baking soda
-1/4 tsp. sea salt
-2 Tbs. coconut flour
-2 Tbs. ground flax seed
-1/4 cup of coconut sugar
-1 tsp. vanilla extract
-1/4 cup dark chocolate chips (I used these)
-3 Tbs. unsweetened applesauce
Directions:
Heat oven to 350 F
Combine the almond flour, baking soda, coconut sugar, flax seed and coconut flour, sea salt into a large bowl and mix
Then add in applesauce, and vanilla extract and mix again
Fold in the chocolate chips
Roll the dough into 10-12 balls and bake for 10-15 minutes or until slightly brown.
