Maple Butter Muffins

Looking for the perfect muffin recipe? Then here is the perfect one! When I first tried maple butter, I was shocked about how much I loved it. Don’t get me wrong, I LOVE my peanut butter, but the second I tried Maple Butter I knew I needed to incorporate it into a recipe of some sort. So maple butter muffins it is, and trust me when I say that they are as decadent and soft as they look! Enjoy!

Ingredients:

-1/4 cup coconut sugar

-1 tsp. baking powder

-1/4 cup unsweetened applesauce

-1 cup flour (1/2 oat, 1/2 all purpose)

-1 egg

-1 tsp. vanilla

-1/4 tsp. cinnamon

-2 tsp. baking powder

-1/4 cup maple butter

-1 Tbs. coconut oil

-1 mashed banana Oat crumble:

  1. 1/2 cup old fashioned oats

  2. 1/4 cup maple butter

  3. 1 tsp. coconut oil

Directions:

  1. Preheat oven to 350 degrees Fahrenheit

  2. Mix the wet and dry ingredients (EXCEPT the oat crumble ingredients) in separate bowls and then combine

  3. Pour mixture into muffin tin

  4. Bake for 15-20 mins

  5. Mix together the oat crumble and add the crumble onto the top of each muffin at about the 10 minute mark and bake again for another 5-10 mins

  6. Enjoy!
