White Chocolate Graham Cracker PB Banana Bread

This post is for my white chocolate lovers! When I was younger, I only ate white chocolate. For example, instead of ordering a regular hot chocolate, I would order a WHITE hot chocolate. I just loved the extra sweetness of white chocolate. But as I got older, I couldn’t handle so much sweetness and thats when I fell in love with dark chocolate, which is good because dark chocolate has way more health benefits! So this past week when I was craving some banana bread, the only chocolate we had in the pantry was white chocolate. And since I haven’t had white chocolate in so long, I said “why not?” So this loaf was born and I have no regrets! It is the perfect dessert loaf and I hope y’all will enjoy it as much as I did!

Dry ingredients:

-2 cups of almond flour

-1/2 cup coconut sugar

-1 tsp. of baking powder

-1/2 tsp. cinnamon


Wet ingredients:

-2 eggs

-2 Tbs. melted coconut oil

-3 ripe and mashed bananas

-1 tsp. vanilla extract

-2 Tbs. peanut butter

-1/3 cup of crushed up graham crackers

-1/4 cup (or more depending on preference) of white chocolate chips

Directions:

  1. Preheat oven to 350

  2. Mix together the wet (except the graham crackers) and dry ingredients in separate bowls

  3. Add wet ingredients to the dry ingredients and mix together

  4. Fold in the graham crackers into the mix

  5. Pour batter into bread pan and bake in oven for about 45 mins to an hour

  6. Let it cool before you slice!
