“Figgie” Newtons

With the last name Newton, I knew I couldn’t live my whole life without the nickname “Fig” (aka “figgiethefoodie”), even my dad’s restaurant is called “Figs”. So it finally reached the time where I make my own Fig Newtons. These babies are Gluten Free and Vegan friendly!! Did I mention they taste HEAVENLY and are so so easy to make!! Honestly as a kid I did not care for Fig Newtons, but as I got older I actually learned to love them and this recipe taste just like the ones you buy in the store and are made with only wholesome ingredients. So give these a try for yourself!


Filling:

-1 1/2 cups of dried figs

-1 1/2 Tbs. coconut sugar

-Juice from a 1/2 lemon

-1 tsp. of cinnamon

-1/2 cup of water (or less)

Dough:

-2 1/4 cups of almond flour

-3 Tbs. coconut flour

-1 scoop of collagen (optional)

-1/4 tsp. salt

-1 tsp. cinnamon

-3/4 cups of apple sauce

-1 tsp vanilla extract

-1 tsp. baking powder

Directions:

  1. Preheat oven to 325 F

  2. Put all the filling ingredients into a food processor and blend until thick

  3. Add dough ingredients in a separate bowl and mix together until all the chunks are out

  4. Roll the dough into a rectangle/square onto a sheet of greased aluminum foil (or parchment paper) on a rectangle pan

  5. Then spread fig filling onto HALF on the rolled out dough and fold the other half of the dough on top (like folding a sub sandwich)

  6. Bake at 325 for about 35-40 minutes

  7. Once cooled, slice into squares
