Sweet Potato and Spinach Skillet

After seeing so many photos and recipes using cast iron skillets, I knew I had to get one and let me say, its a LIFE CHANGER! It did not take me long to understand why they were so popular. After many experiments, I finally came up with this sweet potato and spinach skillet using some of my favorite vegetables. I made this skillet recipe weekly last semester, and one skillet lasted me most of the week for my meals. I hope y’all enjoy!


Ingredients:

-1 red onion, chopped

-1 package of chopped frozen spinach

-2 medium sweet potatoes, cubed

-1/2 tsp. salt and pepper

-2 eggs

-1/2 cup unsweetened almond milk

-2 Tbs. cream cheese

-1/3 cup feta cheese

-2 cloves of garlic, diced

Directions:

  1. Preheat oven to 400 F

  2. Sauté the chopped onions and garlic on high heat on stove top until you can smell them and they are slightly brown

  3. Add in frozen spinach

  4. On low heat mix the spinach with the chopped onions and garlic until spinach is cooked (While spinach is cooking, whisk together the almond milk, eggs and cinnamon and ginger.)

  5. Add in chopped sweet potatoes in to the skillet

  6. Pour the egg mixture into the skillet, covering the spinach and potatoes

  7. Mix in the cream cheese and then sprinkle the feta cheese, salt and pepper on top

  8. Bake at 400 F for about 20-25 minute
